Preheat oven to 375°F. In a skillet, over medium heat, brown meat till cooked. Drain grease & set aside. In same skillet, saute onion & zucchini about 3 minute. Stir in tomatoes & oregano; return meat into saucepan & bring to a boil. Pour over uncooked tortellini into large casserole (with cover). Sprinkle with 1/2 of the cheese.

Instructions. Preheat oven to 375°F. Heat olive oil in a 12-14 inch oven safe skillet over medium high heat. Pour marinara sauce and diced tomatoes over the sausage mixture; season with garlic powder and stir. Bring the mixture to a simmer, reduce heat to medium-low, and cook at a simmer until the diced tomatoes break down into the sauce, 30 to 45 minutes. Preheat oven to 350 degrees F (175 degrees C). Bring a large pot of lightly salted water to a boil.

Stir until all ingredients are distributed evenly. Turn pasta into a 9x13 casserole dish/pan and spread out evenly. Sprinkle shredded mozzarella over top of the pasta. Bake for 30-40 minutes or until the tortellini is cooked and the cheese has melted. Broil for a few minutes to brown the cheese up a bit.

In saute pan over medium heat brown the Italian sausage with the pepper and onion. Drain any grease and then pour into 9×13 baking dish. Then add the tortellini and marinara sauce. Heat the olive oil in a large, deep skillet or pot over medium-high heat. Add the sausage and cook for 4-5 minutes to brown. Stir often and break up larger pieces with a wooden spoon or spatula.
